I had a very pleasant Mother's Day. Unfortunately, it is followed by a Monday, but I won't dwell on it now ;) I received roses, a handmade card, and... chocolate cheesecake.
B decided to indulge me by purchasing those four cheesecake on a tray dealies from our local warehouse store. Now, I've drooled over those tasty treats when we've gone shopping and unhappily turned away from them because they weren't necessary. Now I know they really weren't necessary. Don't get me wrong. In this case B hit the mark perfectly for me, but The Father's Table cheesecake didn't live up to the high expectations.
The four flavors were triple chocolate, turtle, Mississippi mud, and fudge brownie. All of the cheesecake was decent enough. Sweet, liked the chips, nuts, and caramel. What brought it all to a grinding halt was the graham cracker crust. It chewed like sand, gritty. The first slice I had I thought that maybe it was that flavor, but it wasn't. I took to scraping the cheesecake part off. And that's pretty bad.
Maybe the mistake was the whole Father's Table on Mother's Day thing.

That's why I started making my own cheesecakes a few times a year. I made a delicious chocolate death last year and I used the topping from it for a New York style and a Marbled cheesecake(new york and chocolate mixed) for my daughters birthday.
Now if I can get them all to turn out the same each time I'd be making progress. Maybe the new oven will help with more even baking....

Finally! The Dark Chocolate Cheese Cake. I still haven't broke down and found the marble one yet.
Deep Dark Chocolate Cheesecake
Crust:
24 chocolate wafer cookies (from one 9 oz. pkg) - I couldn't find these and used chocolate gram crackers
1 TBSP sugar
1/4 cup butter, melted...I also used too many gram crackers and needed more butter!LOL
Filling:
10 oz. dark chocolate(bittersweet), chopped. a pkg of 60% cocoa chips worked well.
4 pkg. (8 oz each) cream cheese @ room temp.
1 1/4 plus 2 TBLS sugar
1/4 cup unsweetened cocoa powder
4 large eggs
Topping:
3/4 cup whipping cream
6 oz. dark chocolate(bittersweet), chopped - again I used chips...another 1/2 pkg. of the 60%
1 TBSP sugar.
Preheat oven to 350 F. Butter 9 inch diameter springform pan with 3 in. sides. Chops cookies in food processor(pounding to death works too!LOL) until finely ground; blend in sugar. Add melted butter and process until well blended. Press crumbs evenly onto bottom(not sides) of prepared pan. Bake just until set, about 5 min. Cool while preparing filling. Maintain oven temp.
Forgot part of the recipe I think:
Stir chopped chocolate in metal bowl set over saucepan of simmering water until melted and smooth(unless you've got a double boiler). Remove bowl from over water; cool chocolate until lukewarm but still pourable. Blen chream cheese, sugar and cocoa powder until smooth. mix in lukewarm chocolate. Pour filling over crust; smooth top. Bake until center is just set and just appears dry, about 1 hour. Cool 5 min. Run knife around sides of cake to loosen then Chill overnight.
Next day. Stir whipping cream, 6 oz. chocolate and sugar in heavy mediem saucepan over low heat until smooth. Cool slightly. Pour over center of cheesecake, spreading to within 1/2 in. of edge and filling and cracks. Chill until topping is set, about 1 hour.
Release pan sides on springform. Transfer cheesecake to plater. Top with chocolate curls(optional). Let stand 2 hours at room temp before serving. Refridgerate any leftovers.
