Chocolate: Tsaratana 61% Cacao
It's good solid chocolate. Those were almost my exact words when I broke into this bar on THE holiday. It was in my stocking :) It has just the right balance of milk chocolate and dark chocolate falling happily in between. Good texture, no bitterness left on the tongue, but not too sweet. Lovely.

Sounds lovely. I find anything more than 65% and you don't get that creamy texture that milk chocolate is known for and the taste that the dark chocolate has too.
I saw a new chocolate a few weeks back and next time I'm in that area again I'm going to buy one and review it for you. ;-)
